Acorn-fed 100% Iberian Ham comes from free-range pigs that enjoyed a diet of acorn, grass and other wild plants found in our own dehesa pastures.

We use traditional methods to prepare our Acorn-Fed 100% Iberian Ham, starting with how the pigs are reared, with a stylised shaping to ensure optimum yield and a fully NATURAL process. In fact, it is one of the only Iberian hams that has only ONE ADDED INGREDIENT: SEA SALT.

The start of the curing process is carried out by making use of the drying houses’ location – more than 800 m above sea level – and the wind that comes in from the north-east of the Sierra de Tentudía and the south-east of the Sierra de Huelva.

During spring and the gradual yet persistent rise in temperatures, the unsaturated fat typical of acorn-fed ham starts to blend in with lean meat, speeding up a series of processes that are to be essential for the powerful, intense bouquet typical of CÁRDENO hams.

Lastly, our Acorn-Fed 100% Iberian Ham is aged during a slow process in our centuries-old bodegas. During this process, a series of moulds and yeasts form on the ham. They are essential to the curing process so we respect them by not adding any other fat or hot oils. This curing and ageing process lasts at least 30 months for a small ham and over 40 months for a large ham.

We cure our ham using a traditional curing process – adding nothing but sea salt – in the south of Extremadura, in Fuentes de León, Badajoz, for 24/36 months.

The approximate yield after boning the ham is between 42% and 50% of its overall weight. That is, a 7 kg ham would weigh around 3.2 kg once boned and cleaned.

The approximate yield after slicing the ham is between 38% and 48% of its overall weight. For example, a 7 kg ham would produce around 37 x 80 g packs.

Format

If you purchase a whole ham (intact with the bone), we will send it to you wrapped in greaseproof paper with a decorative cotton sleeve. The product is delivered in a gift box.

If you purchase a boned ham, we will remove the skin and outer layer of fat and send it vacuum-packed.

If you purchase the ham sliced, we will send it finely sliced in vacuum packs of 80 g. The product is delivered in a gift box. If you would like a sample of the bones, please leave us a comment at the checkout.

Recommendations for serving

Serve fine slices at room temperature (preferably between 20–25ºC). For sliced ham, there is no need to store it in a refrigerator – just store it in a dry place. You’ll know that the slices are perfect to serve when they separate from one another naturally.
