Our 1910 Limited Edition Ham came into being because we wanted to make the PERFECT acorn-fed ham.

In 1910, the company’s founding year, Plácido Cárdeno Navarro started his business venture with the idea of selling ham products from the region with “SPAIN’S LARGEST DEHESA” located between Cabeza la Vaca and Fuentes de León.

  • Pigs are almost 24 months, meaning they have enjoyed two “montaneras” – periods during which pigs fatten up on acorns. In this case, their first montanera is at 7–8 months and their second at almost 20 months.
  • Cured in our centuries-old “Bodega del Molino”.
  • Top scoring in Oleic and aroma tests.
  • All hams are carefully selected by an expert ham producer.

We cure our ham using a traditional curing process – adding nothing but sea salt – in the south of Extremadura, in Fuentes de León, Badajoz, for 24/36 months.

The approximate yield after boning the ham is between 42% and 50% of its overall weight. That is, a 7 kg ham would weigh around 3.2 kg once boned and cleaned.

The approximate yield after slicing the ham is between 38% and 48% of its overall weight. For example, a 7 kg ham would produce around 37 x 80 g packs.

Format

Format

If you purchase a whole ham (intact with the bone), we will send it to you wrapped in greaseproof paper with a decorative cotton sleeve. The product is delivered in a gift box.

If you purchase a boned ham, we will remove the skin and outer layer of fat and send it vacuum-packed.

If you purchase the ham sliced, we will send it finely sliced in vacuum packs of 80 g. The product is delivered in a gift box. If you would like a sample of the bones, please leave us a comment at the checkout.
